Shrimp Spinach Bowl
This super healthy, fresh and clean shrimp bowl was amazing and I felt great after it! Did not make me feel bloated or heavy and I was all about it. I have been craving heavier foods since this quarantine started, but this meal honestly, was all I needed..

INGREDIENTS:
-1 cup of peeled, raw shrimp
-1 cup of quinoa (I seasoned mine with cayenne pepper, turmeric, salt + pepper)
-Cherry tomatoes
-Pickled onions (recipe below)
-Fresh cucumbers
-Avocado
-Corn
-Tahini Sriracha Lime Sauce: 3 tbsp of tahini, 1 tbsp of sriracha, 1 lime juice
DETAILS:
-The first step is to season your shrimp, I seasoned my shrimp with cayenne pepper, salt + pepper and a little bit of garlic.
-While the shrimp was marinating, I started cutting all my other ingredients.
-For the pickled onions: 1 red onion, 2 tbsp of apple cider vinegar, 1 tbsp of red wine vinegar, 2 tsp of white vinegar, 1 tbsp of red pepper flakes, salt + pepper to taste and onion powder. Then you add 1 cup of boiling water, close it and put it in fridge for about 2 hours.
-Then, I cooked my shrimp for about 5 minutes on medium high.
-Finally I put all my ingredients together and that is IT!
