Vegan + Gluten Free Delicious Pancakes

 

I woke up with a sweet tooth today, I was drinking my coffee and SERIOUSLY craving something sweet, so I decided to make my Monday better and make some VEGAN PANCAKES! It took me about 20 minutes from the moment I started making them to the minute I sat down and enjoyed them. Super delicious, gluten free + vegan, and super easy to make. INGREDIENTS: 

-1 cup of @bobsredmill almond flour 

-1 cup of almond milk 

-1 tbsp of baking powder

-2 tbsps of coconut oil

-1 tbsp of sugar 

-Splash of salt

Maple syrup + sugar for cooking and after! 


DIRECTIONS: 

In a bowl mix the almond flour, almond milk, baking powder, coconut oil, sugar and salt.

Once it is thoroughly mix, turn your stove on to medium high and let it heat up.

Add 1/4 cup of the mix and let it start bubbling.

Once it is bubbly turn around and after 1-2 minutes take it out! Then repeat until you are out of mix. Top it off with some bananas, blueberries and coconut shreds. 


Serving Size: This recipe is for 2-3 people. Make 1/3 of the ingredients for just 1 person.
