VEGAN STREET TACOS.. all I can say is WOW!

Hey there!! For all my vegans out there you are in for a treat today! This recipe might be the vest vegan recipe I have made so far and it is really delicious! Because I have such a weak stomach, I am starting to try some vegan recipes and seeing how I feel, so far I feel great!

INGREDIENTS:

-1 can of chickpeas

-1/3 of a can of corn

-Fresh cilantro

-Sweet peppers cut in slices (about 1/3 of a sweet pepper)

-2 tortillas

-Olive oil

-Paprika, garlic powder, salt + pepper

-Purple cabbage

-Cucumbers

-Lime

-Red wine vinegar

-Optional: organic salsa

DETAILS:

These took about 25 minutes to prepare and are super fresh and super delicious. 

The first step was to season my chickpeas, for these I put 1 tbsp of paprika, 1 tbsp of garlic, onion powder and salt + pepper to taste. I let it sit for about 10 minutes.

The second step was to pickle my cucumber and cabbage, I pickled these with 1 tbsp of red wine vinegar, 1 lime (juice), salt + pepper and let it sit for about 20 minutes. 

I put some tortillas in the oven to get toasty, and while they’re getting toasty, in a pan (medium heat) I added the chickpea mix with 1/3 of a can of corn and red bell peppers in strips in some olive oil. Once they were crispy and crunchy and turned it off took the tortillas out and put the chickpea mix with the tortillas. Then, I added the cabbage and topped it off with some organic salsa, cilantro and sriracha!
